Get out the slow cooker and cook

Don't feel like cooking tonight? Get out your slow cooker instead and check out some recipes from Addie Gundry in "Essential Slow Cooker Recipes" (St. Martin's Griffin, $19.99.)

There's plenty to choose from with lots of cooking ease - put it in a pot in the morning and have dinner ready when you get home!

The book is divided into 7 chapters with more than 100 recipes: Appetizer, Breakfast, Classic, Dinner, Side Dishes, Soup and Stew and Dessert.

Appetizers offer things like Bacon Cheeseburger Dip, Bacon-Wrapped Smokies, Shredded Chicken Nachos and more. Breakfast recipes include Banana French Toast, Coffee Cake, Potato Puff Breakfast Casserole and more. Classic recipes have favorites like Beef Stroganoff, Ritz Cracker Meat Loaf, Stuffed Peppers and more. Dinner recipes include Baked Ziti, Ham and Cheese Potatoes, Ranch Bacon Chicken Dinner and more. Side Dish recipes offer Au Gratin Potatoes, Creamed Corn and Slow Cooker Stuffing. Soup and Stew recipes include Hungarian Goulash, Taco Soup and French Onion Soup. Desserts end things with Dump Cake, Peach Cobbler and Pumpkin Cake.

I love my slow cooker, so I made a variety of things from the cookbook. One night I made Honey Buffalo Chicken Sandwiches, meant to be served as an appetizer, but can easily become a main dish sandwich. I liked the addition of honey to the buffalo flavor. I also made Cinnamon Rolls in the slow-cooker, as I wondered how that could work out and the answer was, pretty good! You have to watch your slow-cooker though - mine always cooks too fast, and running it the time the recipe said caused it to be a bit overcooked. I also made Jambalaya one night when I was in the mood and it turned out really good as well. Another night we made Minestrone Pasta, which was a really good soup. We also made Chicken Noodle Soup for some delicous homemade goodness. And finally, we made Pizza Bread, which was a bit more labor intensive, but everyone in my family loved!

I really enjoyed the variety in this book, it wasn't all soups and stew, which is sometimes all you get in slow cooker books.
